Grandma’s banana bread

Ingredients
- 1 cup castor sugar
- 125gm unsalted butter
- ½ tsp bicarb soda
- 3 bananas mashed
- 2 eggs beaten
- 1½ cup self-raising flour
- 2 Tbsp milk
- 1 tsp vanilla essence
Method
- Cream the butter and sugar
- Add well-beaten eggs then the bananas mashed with vanilla
- Add bicarb soda to milk
- Mix alternatively with flour
- Bake in a square tin or a loaf tin for 45 minutes at 180C, or if fan-forced on 170C
- Ice with tangy lemon icing or cream cheese icing when cooled
