Zesty buddha bowl
Ingredients
- 100gm dried lentils
- 300gm white rice
- 400gm quinoa
Dressing
- 200ml water
- Salt & pepper
- 100ml Knorr Intense Flavours Citrus Fresh
To serve
- 5 x avocados, sliced
- 1kg baby heirloom tomatoes
- 300gm red cabbage, thinly sliced and pickled
- 1kg roasted beetroot
- 500gm roasted pumpkin
- 250gm snow peas sprouts, thinly sliced
- 80gm alfalfa sprouts
Preparation
Bright, colourful and healthy, this veggie dish jumps off the plate.
- Cook quinoa, lentils and rice until tender, drain and rinse.
- Combine Knorr Intense Flavours Citrus Fresh, water and salt and pepper.
- Arrange all ingredients in a bowl and pour over dressing.
